Chimichurri Sauce is a tangy Argentinian blend loaded with Garlic and Herbs. It can be used for cooking, but is a great table condiment for grilled meats.

Ingredients
1cupfinely minced fresh Flat-leaf Parsley;
3tbsp.minced Garlic;
1tbsp.chopped fresh Thyme;
1tsp.Salt;
½tsp.ground Black Pepper;
½tsp.ground Cumin;
½tsp.Smoky Spanish Paprika;
1/3cupExtra-Virgin Olive Oil;
4tbsp.Red or White Wine Vinegar.
Instructions
Mash the garlic in a bowl along with the salt to release the juices and flavors.
Add all the remaining ingredients except for the oil and vinegar and mix everything together, mashing well to bruise the aromatics.
Transfer the solids to a suitable container and then add the oil and vinegar. Mix and refrigerate overnight to allow the flavors to meld.
